<p>We gave out more than 200 portions of pumpkin pie, and according to some student leaders I talked to, we had a better turnout than any recent &#8220;official&#8221; CSAIL social event, in terms of the diversity of students who came to partake.  I asked those who arrived first to fill out evaluation forms for each pie they tried, and I was able to make some conclusions about the various pie recipes.  Each pie was assigned a number, from 1 to 12, but most tasters tried only two or three pies.  (I personally had a bit of all but one, but did not evaluate any, since I had baked half of them!)<br />

I lined the first nine pies up on our lunch table, along with 50 preprinted evaluation forms, paper plates, and a fork.</p></div><br />

Not seen in this picture, to the right, was a bowl of whipped cream I made just before the official start of the event; our tasters sure do like whipped cream &#8212; I was worried that nearly a pint of cream would make too much, but they proved me wrong.  (I didn&#8217;t have anything better to do with the cream after the pie baking was over, so it made sense for me to bring it in and do this rather than buying whipped cream in a spray can.)</p></div></p>
<p>The co-winners were King Arthur Flour&#8217;s &#8220;Golden Pumpkin Pie&#8221; and David Page and Barbara Shinn&#8217;s &#8220;Honey Pumpkin Pie&#8221;, with Joanne Chang&#8217;s &#8220;Super-Pumpkiny Pumpkin Pie&#8221; rounding out the top three. A number noted the dark rum which is a principal flavoring ingredient.  This pie was ranked third on filling texture and fourth on pumpkin flavor, but tasters thought it was slightly too sweet and equally too spicy, and placed it seventh overall.  The crust was given particularly poor marks &#8212; even worse than the other pie I made from the same batch of crust; I&#8217;m inclined to attribute that to Sax&#8217;s odd and inadequate blind-baking procedure.</p></div><br />

As a chiffon, this pie had a much lighter texture than all of the other pies (being custards), which some tasters quite liked, but it was considered only average on pumpkin flavor and underspiced overall.</p></div><br />

It shares the same crust (attributed by Richard Sax to Nick Malgieri) as Richard Sax&#8217;s &#8220;Best-Ever Pumpkin Pie&#8221;, but was ranked significantly higher on crust texture than Sax&#8217;s pie despite not having been blind-baked.  Although this recipe is called &#8220;Honey Pumpkin Pie&#8221;, honey is only one of three sweeteners in this pie (the others being granulated sugar and light brown sugar, in equal amounts by volume with the honey), and the two tasters who evaluated this pie both ranked it as too sweet despite giving it top overall marks.  It was tied for first also on the spices scale, where it ranked equal with the King Arthur pie and with Sue Felshin&#8217;s &#8220;Scratch Pumpkin Pie&#8221;.  It also received the highest possible rating (5.0) for filling texture.  One caution is that only two tasters evaluated this pie, so there is a great deal of uncertainty in all of the rankings.</p></div><br />

It has a sweet-and-spicy whole-grain crust (ground rolled oats, whole wheat, brown sugar, cinnamon), which was not blind-baked, and the pumpkin custard is sweetened entirely with honey (more than half a pound of it).  It was also one of my personal favorites (which were closely matched by the overall rankings).</p></div><br />

Moosewood is a famous vegetarian restaurant in Ithaca, New York; not being a veggie, this is the only one of their cookbooks I have.  As I noted in <a href='/2014/10/13/pumpkin-pie-fest-part-ii-the-pies/'>Pumpkin Pie Fest part II: the pies</a>, this pie had a number of issues related to the size and shape of the pie plate and the way in which it was cooked; tasters were not impressed, rating it too sweet, too spicy (it had half a tablespoon of ginger!), and overall in ninth place out of the ten pies for which more than one evaluation was received.  A number told me that they wanted to like this pie, but were turned off by its flaws, particularly the overspiced pumpkin custard.</p></div><br />

I&#8217;ve made a number of pies from the <cite>Four &amp; Twenty Blackbirds Pie Book</cite> by now, and all have been big hits with those I shared them with.  This one, not so much.  The crust was ranked fairly highly (which I would attribute to the more forgiving formula, which includes cider vinegar, as well as the egg-white glaze applied during blind baking which keeps the crust from sogging out during the long baking time underneath a wet custard filling).  That custard, however, was considered both much too sweet and insufficiently spicy, and overall, this pie placed ninth.  I suspect there is a better pie here than what I was able to make; I think the butterscotch in particular, which is the source of most of the sweetness, could have been more caramelized, leading to a deeper and less sweet custard; I also suspect the carrot juice didn&#8217;t really add much of value to this pie, given that it was already sweet and pumpkin-colored.</p></div><br />

It was baked by Jason Miller using a <cite>Cook&#8217;s Illustrated</cite> recipe from 2008, but the custard was insufficiently cooked (which may have scared off some potential tasters). A few slices of the Four &amp; Twenty Blackbirds pie remain, as does about a quarter of Nick Hynes&#8217; <em>second</em> pie, and about half of Jason Miller&#8217;s slightly undercooked pie on the other table.
