The game being played is Puyo Puyo, but you can put whatever sprites you want on the screen. My brother collects Game Boy Colors and he has copies of Tetris in all of them. Personally, if I had a whole bunch of Game Boys, I would fill them with either Pokemon games or maybe Hamtaro games. I’d be more likely to collect GBA SPs and fill them with Mega Man Battle Network and Golden Sun.
